Manu Restaurant works with a tasting menu inspired on Manu Buffara Chef´s story, her staff and suppliers.

The restaurant follows the fresh products concept what makes possible some unexpected changes on menu.

Fishing + sustainability + handmade

We believe in the transparency of the fish production and marketing chains. Artisanal fisheries are the solution to the economic and environmental sustainability in communities’ fishermen.  This means that Manu Restaurant doesn't keep a fixed menu. We adapt ourselves with what the sea provides us every day, because it is from the sea that we depend on and from our fishermen who treat the sea with the same passion that we give to the food when they arrive at Manu Restaurant.

Garden

Changes begin on the earth and on the people who work on it.

The urban agriculture is organized by the communities around the City of Curitiba, getting back the values that we have lost, our relationship with food, the right food. We need to keep in touch with the land: to plant, to harvest and learn to wait! We are proud to offer a fair meal, with ingredients produced by honest people and a sustainable agriculture.

Farm

Food is a powerful transforming agent, capable of changing people´s lives and around. But to make it happen it is necessary to fight the lack of sensibility in relation to food and invest in education. We believe in the production of happy animals and we also maintain a huge bond with the people who provide us! We work with the best meats from different producers in the state, who also believe in our philosophy.
